    With sourdoughs, and fermenting in general, you change the nature of the wheat. The more the bacteria processes the wheat, the less it behaves like wheat with cooking. It also introduces alcohols and other esters. This will impact the time to cook, the ability to brown, the crispiness that it can achieve, and it can give unwanted sourness. You want a little fermentation, but not too much.Love sourdoughs, but for pizza?Meh.At least nothing longer than an 8 hour age.Ymmv.

    Shouldn't the final dough test be 24 hour ferment with straight starter vs 48 hours with the starter/yeast combo? They seemed to agree that straight starter won the 24 hour stretch

    The very nature of Bon Appetit's pretentiousness will guarantee this won't be the "perfect pizza", sorry- You want people who know pizza you have to go to the midwest, Heggie's, Kowalski's etc...
