Frank Pinello and Mark Iacono Eat "Japanese Pasta" | Gochi Gang

  • Last week, Reina Scully ate her way through three of Japan's most recognizable ramen styles. But today, she's on a mission to see where ramen is going next. Her first stop is Niche, where chefs Frank Pinello, Mark Iacono, Carlo Carciotto, and Anthony Vitolo are ready to try mazemen, a saucy, brothless style of ramen. Chef Shigetoshi "Jack" Nakamura calls this dish "Japanese pasta"—but will his cheese and bacon-topped noodles satisfy some of NYC's most beloved Italian-American chefs? And later, Reina heads back to Ramen Shack to eat Keizo Shimamoto's infamous ramen burger one last time. From a discussion of ramen-stuffed pizzas and burritos, to an interview with 16-year-old ramen prodigy Josh Reisner, Reina is seeing how ramen is taking new shape in NYC heading into 2020.

im lucky enough to be the child of parents who love food and travelling. i have been gifted the lucky privilege of travelling the world and experiencing the local cuisine from a young age. the most amazing desert i've ever had was from a Japanese chef who went to France to learn the trade from a michelin star chef. it was a blood orange and black sesame tart. ill never forget it even though i don't have the biggest sweet tooth. the people of japan are awesome cooks and have amazing ways of blending foreign flavours with their own.

ok my 2c. Living in Japan 15 years here. The Japanese will do whatever they do at the highest quality, that's their nature. So it's not surprising to hear Italians say that the Japanese Italian is better than the real Italian. However, the Japanese are not creative at all with their dishes, everything is exact to a standard, national recipe. The first carbonara you ever have in Japan will blow you away, but you'll realize soon that every time you try a carbonara at any Japanese restaurant it tastes exactly the same, which isn't a bad thing right? This is Japan in a nutshell. Super high quality and care put into every meal, no deviation. If you come to Japan the first time, you'll just be in foodie heaven. If you live here for 10 years, you'll be like "god, wish somebody would experiment a little more"

"who cares whats ramen" well everybody in Japan does that is why you move to the Great Satan. No, that is not Japanese. That is a gringo interpretation of Japanese, because it came out of rejecting many elements of the Japanese culture.
