To avoid getting tough and chewy squid, you should either grill it fast and hot or low and slow. These squid tubes are stuffed with tentacles, shrimp, scallions, garlic, ginger, spices and rice are dry rubbed with mustard powder, onion powder, salt & pepper, cayenne and coriander.

    Right, hot-dog bun with rice (the filling). Cmon, Chris. Anyway i use bread crumbs, instead of rice, so I can toast em in the pan along with everything else, before filling up the squids.

    Brad is the only one on Bon Appetit who is an actual cook. I was a chef (yes, not a cook) for over 20 years. Brad is the unique brand of crazy that makes kitchens hum and sing. I would love to see how Brad plates it up. If I were still cooking, this would def go on the menu.

    We just put squid in a seafood sauce with shrimps and oysters and we pour it on top of some spaghetti 🍝. Tastes really good and you don’t need ketchup Chris👌🏻😋😂
