    Seems like the cayenne pepper gives all the heat. I tried omitting and just using hot sauce and could barely taste it. The oil probably leeches out most of the capsaicin, thus the need for so much.

    @Chris: you should try really finely shredded red cabbage that's been just slightly blanched with salt water and a spoon of sugar. Iceberg has nothing to that kind of crunch and flavor.
